SARA’S SWEET POTATO AND TUNA CAKES WITH DILLSAUCE

Sara's Sweet Potato and Tuna Cakes with Dill Sauce, a flavourful and nutritious dish perfect for a satisfying meal. Featuring canned tuna, mashed sweet potato, egg whites, green onion, fresh dill, garlic powder, lemon and garlic spice, Cluck & Squeal Himalayan Seasoned Salt, these cakes are bursting with savory goodness. Simply mix the ingredients, spoon into muffin tins (silicone recommended), and bake at 375°F for 30 minutes. Pair with a tangy Dill Sauce made from Greek yogurt, fresh dill, lemon juice, garlic, salt, and pepper for a delightful finishing touch. Serves one, but feel free to double or triple the recipe for more servings. Enjoy the wholesome flavours of Sara's creation!

 

INGREDIENTS
  • 140 g of canned tuna drained (packed in water)
  • 125g of cooked and mashed sweet potato
  • 3 egg whites
  • 1/4 cup of chopped Green onion
  • 1/4 cup of chopped fresh dill
  • 1 tsp. of garlic powder
  • 2 tsp. of lemon and garlic spice
  • 1 tsp. of Cluck & Squeal Himalayan Seasoned Salt

INSTRUCTIONS

  1. Mix together and spoon in muffin Tins. I recommend using silicone muffin tins.
  2. Bake in oven at 375 for 30 minutes

DILL SAUCE

  1. 1 cup of Greek yogurt (low fat)
    • 1/4 cup of chopped fresh dill
    • Juice of 1 lemon.
    • 1 garlic clove crushed.
    • salt and pepper to taste.
  2. Mix all together and serve with tuna cakes.
